An Old Fashioned Country Picnic



We cannot control what goes on outside the world,
but we can control what goes
on in our home!

For the sake of spontaneity and old fashioned summer fun,
let's have a PICNIC...

~~~Menu~~~

Orange cake
sweet iced tea
italian sandwiches
cucumbers
pasta salad



~~Orange Cake~~~

Amazing! The perfect cake for any warm summer occasion!

Cake
4 T butter 1 1/2 c flour
1 c sugar 2 tsp bake powder
2 eggs, seperated pinch of salt
1/2 c orange juice

~Preheat oven 350'. Cream butter &
sugar. Add egg yolks & beat till thick &
yellow. With a fork, mix together dry ingred-
ients & add them alternately with the o.j. Fold
in stiffly beaten egg whites. Pour into tow buttered
round 8" cake pans and bake at 350' for 20 minutes.
Cool completely & remove from pans. ~

Orange Filling
6 tsp sugar
1 1/2 tsp cornstarch
pinch of salt
1/2 c water
1/2/ grated orange peel
1/2 c fresh orange juice
1 egg yolk, slightly beaten
1 tsp butter, melted
1/2 crushed pineapple

In top part of double boiler, over boiling water,
mix sugar, cornstarch & salt.
Gradually add water, orange peel & juice, then egg yolk.
Cook, stirring, till smooth & thick.
Fold in butter & pineapple.
~Chill~

Orange Icing
zest of 1 orange 1 1/2 c powdered sugar
juice of 1 orange 1 tsp white rum
coconut for garnish

Lightly grate rind of orange & bring it & the juice to a boil. Strain the juice & pour as much hot joice over sugar as needed to make right consistency for spreading. ~Stir in rum~

To Assemble
Put the chilled filling between layers. Frost with orange icing, allowing some to dribble over edges. Sprinkle on coconut if you like. This is such a happy and beautiful cake... ~enjoy!


~Sweet Iced Tea~

Gather three lipton tea bags
fill your favorite pitcher with hot water
add tea bags
place outside in sun for an hour or so
add 1/4 c sugar
bring back inside, chill or pour over icecubes!
now, once chilled, place in water bottles or portable pitcher to take along


~~Italian Sandwiches~~
ciabatta bread sliced olive oil
tomatoes sliced mozzarella cheese
fresh basil leaves

Drizzle olive oil on top each side of
ciabatta bread slices. Place sliced tomatoes
on one side of bread. Layer mozzarella slices
on top of tomatoes. Add one or two basil leaves.
Fry in olive oil in skillet (like you would a grilled
cheese sandwich) until cheese is melted.
wrap in tinfoil and pack in your picnic basket!


~Cucumbers~
cut a cucumber into bite sized slices
So refreshing and
so easy!

Pasta Salad
This is a stable spring and summer
delight in our home!

1 bag of colored spiral pasta Italian salad dressing
1 can of olives peperoni sliced
cherry tomatoes

Boil pasta until el dente. Rinse in drainer under cold water until cold.
Return pasta into large bowl. Add olives, peperoni & cherry tomatoes.
Drizzle dressing onto till well covered.

Now, transfer your meal into portable containers and pack into your picnic basket or bag.
