Recipe for Spring's Drizzle



For the past week it has been simply glorious weather. 
Sunny days topping out in the 70's and 80's. I've been donning shorts, sandals and sunscreen. We enjoyed our first seasonal bbq complete with virgin margaritas and home made wine. But now this weekend is rainy, blustery and cold.
How to solve the Spring blues? Here are some sure fire recipes
that will keep your spirits lifted and tithe you over 
until warm weather and sunshine return.

Perfect Spring Salad

1pkg rigatoni (spiral) pasta cooked and drained
1 container cherry tomatoes
1 pkg pepperoni
1can black olives
1jar green olives
shredded romano cheese
italian dressing

Boil pasta, drain. In a large bowl drizzle just a tablespoon or so of olive oil onto pasta to prevent from sticking. Set aside to cool. 
Slice tomatoes into thirds add to pasta.
Slice pepperoni into halves add to pasta.
Drain black olive juice, slice into halves add to pasta.
Drain green olive juice, slice into halves add to pasta.
Sprinkle shredded romano cheese liberally over pasta dish.
Coat 1/2 cup of italian dressing to dish. Toss.
Chill salad for about an hour or more.

Minty Green Tea Milkshakes

Green Tea ice cream, made with milk can be found at most Health Food stores and maybe in your typical grocer.

4 cups green tea ice cream (two 1-pint containers)
3/4 cup plus 2 tablespoons milk
1 cup loosely packed fresh mint leaves

Puree ingredients in a blender on high speed until smooth.
Divide among four tall glasses and serve immediately.
(billings friends, I have tons of peppermint growing in my back yard, come on over if you need some)

Mini Swiss Grilled Ciabata Burgers



1 pkg ground Turkery
1/2 cup bread crumbs
1/4 cup shredded parmesan cheese
diced green onions (about three stalks)
salt and pepper
1 tablespoon basil and oregano

Ciabata bread sliced (found at most grocers)
Sliced swiss cheese
Arugula salad (found at most grocers)

Combine first 6 ingredients into large mixing bowl.
Form round balls with mixture and flatten so it looks like it fits the inside of Ciabata.
Cut squares of wax paper out. About 5in x 5in. 
Place first pattie on one square. Then place wax paper square on top.
Layering each pattie with wax paper prevents patties from sticking.
Grill patties according to your liking.
Two minutes before patties are done, add swiss cheese till melted. Remove from grill.
Top cooked patties with arugula and Ciabata bread.
Add to burgers your choice of dressings.
Viola! These burgers are soooo yummy!

Spring Jello Salad


1 lg pkg Rasberry Jello mix
1/2 container Whipped Cream/ Cool Whip

Make Jello mix according to package directions. Chill 4 hours.
Add Cool Whip to jello. Mix well until Cool Whip is evenly incorporated. 
Perfect sweetness 
to any Spring or Summer meal.
